I should really wrap up these apple posts and move on to some pumpkin!

Here is another gooey ooey yummy breakfast treat for fall. I love how easy it is as we all know I’m all for easy. You don’t even have to peel the apples in this one!

The recipe comes from the amazing blog Six Sister’s Stuff. I’m pretty much in love with them. If I try one of their recipes it’s sure to turn out! They even commented on one of my posts one day and I was in heaven since they are like my idols!

Apple Pull Apart Bread

Yield: 6 servings

Apple Pull Apart Bread

Ingredients

  • 12 frozen dinner rolls, thawed
  • 2 Granny Smith apples, chopped
  • 1/3 c. brown sugar
  • 1/2 c. walnuts, finely chopped
  • 1/2 tsp cinnamon
  • 2 Tbsp butter, melted
  • Icing
  • 1/2 c. powdered sugar
  • 2-3 tsp milk

Instructions

  1. Preheat oven to 350 degrees. Spray a 9×5 loaf pan with non-stick cooking spray.
  2. Mix together the chopped apples, brown sugar, walnuts, and cinnamon until well combined.
  3. Using a pair of kitchen scissors, but each roll into thirds. Place 12 small roll pieces on the bottom of the loaf pan. Drizzle a third of the melted butter on top of the roll pieces. Then top with third of apple mixture. Repeat layers two more times, until ingredients are used up.
  4. Let rise for about an hour or until rolls have doubled in size. I actually let it raise overnight and it was pouring out over the side. I just stuck a knife into it several times and let the air out and then baked it.
  5. Bake for 30-35 minutes, until tops are golden brown and the middle rolls are done.
  6. Mix together icing ingredients and pour over bread.

Am I sad? Ummmm….nope! I’m actually a little excited. Is that bad? I love the idea of having the house to myself, Miss K to myself, no one wondering what I’m doing. Just being. Existing and doing whatever. Don’t worry Sunday evening I will be more than ready for his return too!

The hubby actually looked at me this past weekend and asked what I plan on doing while he’s gone. I just giggled. In return he rolled his eyes and said, “Spend the entire weekend at your Mommy’s?” Uh yup. Possibly.

I love my mom’s. She makes me coffee, breakfast, plays with my kid, she has a big house, asks me what menu I want. Things that don’t happen at my house. For that little instant I’m once again back at home and I’m taken care of. I love it. I adore it. I cherish every single moment. I know some day I won’t have that so every single chance I get I spend time with her.

Am I a Momma’s girl? Why of course, but I’m also Daddy’s little girl. Just ask my brothers they will assure you this is true. It comes with the territory of being the only girl. Such a rough thing I tell you!

My hubby likes to tell me I’m spoiled. I just say I’m loved because that’s what they spoil me with. Pure unconditional love. I fully intend to spoil Miss K in this way. I see no harm in it. I figure I turned out pretty good!

So while you are making these lovely biscuits and spoil your loved ones. I won’t tell them how super easy they are!

Garlic Monkey Bread

Prep Time: 10 minutes

Cook Time: 12 minutes

Total Time: 22 minutes

Yield: 6

Serving Size: 1 Biscuit

Garlic Monkey Bread

Ingredients

  • 1 can Grands buttermilk biscuits
  • 3 Tbsp butter, melted
  • 3 cloves garlic, minced
  • 1 Tbsp dried parsley flakes
  • 1/4 c. Parmesan cheese (reserve 2 Tbsp for topping)

Instructions

  1. Grease 6 muffin cups.
  2. Cut each biscuit into 6 pieces. Place in bowl.
  3. Combine the rest of the ingredients in small bowl except for 2 Tbsp Parmesan cheese. Pour over biscuits mixture. Gently toss biscuits to evenly coat. Evenly split biscuit pieces between 6 muffin cups. Sprinkle remaining 2 Tbsp of Parmesan cheese over biscuits.
  4. Bake at 400 degrees for 12-14 minutes.

I’m not going to lie. These happened by accident. Total and complete, “Oh Crap I haven nothing to go with this Crock Pot Italian Sausage Spaghetti!”

I thought I was totally on top of things when I had the crock pot rockin’ and supper was going to be done and then I started thinking oh I should probably get some bread going to have as a side. So I went diggin’ in my freezer for my trustee bread sticks I always throw in when I’m in a pinch, but that’s right I grabbed the Sourdough ones and the hubs didn’t like ‘em. Into the garbage they went. I wasn’t a big fan either.

Then the head went into the fridge and I saw crescent rolls. Oh you are a lifesaver Crescent Rolls. Then I started dreaming of butter and garlic because who doesn’t dream of that? That’s when I spied the string cheese. LIGHT BULB!

Crescent rolls brushed with butter and garlic, then stuff a piece of string cheese in the middle, roll em up and then butter the tops. Heaven. Genius. I’m so smart right? Now don’t tell me you have been doing this forever. Just let me bask in the moment for a bit ok?

Mmmmhmmm thanks.

Let’s just say when the sis-in-law came over and I said I wasn’t sure about these because it was a experiment, after one bite her eyes lit up and she said I could experiment anytime I wanted!

Cheesy Garlic Crescent Rolls

Prep Time: 10 minutes

Cook Time: 12 minutes

Total Time: 22 minutes

Yield: 8

Serving Size: 1 crescent roll

Cheesy Garlic Crescent Rolls

Ingredients

  • 1 can Pillsbury crescent rolls
  • 2 Tbsp butter, melted
  • 2 garlic cloves, minced
  • 1/4 tsp salt
  • 1/4 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 c. parmesan cheese, grated
  • 2 pieces string cheese

Instructions

  1. Preheat oven according to crescent rolls package directions
  2. Mix together butter, garlic, salt, basil and oregano.
  3. Cut each piece of string cheese the long way and then in half, so you will end up with 8 pieces.
  4. Unroll crescent rolls then brush each with the butter mixture. Place a piece of sting cheese on the long end of the crescent roll and then roll up. Place on baking sheet.
  5. Brush tops of crescent rolls with butter mixture and then sprinkle with Parmesan cheese.
  6. Bake according to package directions.

Ok who knew homemade beer bread could be this easy? Not me.

I always bought the prepackaged boxes that you added beer to and poured butter over the top. Obviously making your own was much more labor intensive right?

Not so much. Like maybe an extra 5 minutes of labor. Totally worth it. Plus whenever I needed a box of it, you guessed it, I never had it on hand! Typical right?!

Even I can carve out an extra 5 minutes in a day to make homemade beer bread. Trust me if I could you can too!

If you want to you could even mix up some bags of the mix so when you want a loaf of beer bread you have it all ready to go. Life does not get much simpler than this when it comes to bread.

And if you don’t have beer on hand well then, good for you, go buy some, drink a few and make this bread!

Homemade Beer Bread

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Homemade Beer Bread

Ingredients

  • 3 c. flour
  • 1/3 c. sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 (12-ounce) beer (you can sub soda)
  • 3 Tbsp butter, melted

Instructions

  1. In a large mixing bowl combine flour, sugar, baking powder salt and beer. This will be sticky.
  2. Place dough in a greased 9x5 inch loaf pan. Pour melted butter of the bread dough.
  3. Bake bread in preheated oven at 350 degrees for 50-60 minutes.

 A lot of times I get ambitious, like overly ambitious and it doesn’t turn out well. Take my garden for instance, my husband informed me just about mowed over half of it the other night because it was so hideous. Enter an epic fail here. So far my tomatoes and zucchini are growing. I’m pretty sure most of my beans and peas are a loss. There’s always next year right? Because I’m sure next year with another child it will even be easier for me to get out there and tend to my garden since I don’t even have time now.

Good thought huh?

Another example is the fact that I usually plant WAY more zucchini than I’ll ever need. Then I shredded and freeze it and throw it in the freezer. Then I promptly forget about it because I’m a food blogger and I’m making tons of new treats all the time and who wants to go back and use up that zucchini that I took time to freeze? Not I my friends, not I.  Or should I tell you about the bananas that are usually found laying in my freezer patiently waiting for me to use them up? Mots of the times they are long forgotten until I need a treat at the last minute and I go back to a tried and true recipe like my Frosted Banana Bars or if I’m craving banana bread in the dead of winter.

It’s September! I’m excited to say hello to fall and start thinking about all my favorite holidays coming up. First up is Halloween, which makes me think about pumpkins, costumes, and CANDY. I don’t eat much candy on its own, but I do like adding candy to recipes. This banana bread is loaded with chunks of chocolate-covered toffee, which adds a nice sweetness. It’s still made out of fruit so perfectly acceptable to eat for breakfast if you ask me.

My three day weekend is coming to an end and I’m trying to deal with the fact that right around the corner is another work day. I ended up with a random three day weekend due to the fact that I never got a “New Years” Holiday earlier this month and took the day off on Friday for that. I’m not sure it was much of a day “off”. As usually I was busy busy…my wonderful husband thought of the fact I would have all this extra time on Friday and made sure to get a bunch of wood work to stain for the basement. I’m glad to say it really wasn’t all that much and it’s done! He varnished it so it really wasn’t that much for me to do. I added a bunch of cleaning and laundry around the house and had a full day. Saturday we went to Alex in the morning to meet a guy that was buying Jason’s snowplow for a 4-wheeler. We also of course went to Menards since we can’t really go to Alex and not go there! Proud to say that all the money we got for the plow was spent at Menards. Honestly that place is worse than Target!!!! Someday I hope we don’t have a “project” at home :) I’ve also been dealing with a serious case of cabin fever this week. I’m not sure why it’s so bad but I’m about ready to ditch this state and go somewhere! But I know…I’m not that exciting and wouldn’t think of randomly going somewhere without a lot of “pre-planning” so that will just wait…and I’ll dream of a summer vacation. I’m thinking camping somewhere so if anyone has any ideas and a wonderful place to do this at let me know! Ok on to this recipe. I know that many of you already have a banana bread recipe as it seems to be a staple but if you haven’t found “THE” banana bread recipe then try this one…it’s AMAZING…and it’s from my mom and mom’s always make wonderful yummy things! Before it was gone Jason was already asking me if I could make it again. Of course I said yes…but I haven’t yet! Try it…you won’t be dissappointed. Oh and it’s super duper easy which I mean is even more wonderful!

Banana Bread

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Yield: 8 pieces

Serving Size: 1 piece

Banana Bread

Ingredients

  • 1 C. Sugar
  • 1/2 c. Butter
  • 2 Eggs
  • 4 Bananas
  • 2 C. Flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt

Instructions

  1. Cream sugar and butter
  2. Add eggs and bananas
  3. Add the rest of the ingredients
  4. Pour into a greased loaf pan
  5. Bake at 350 for 1 hour or until the bread tests done

Nanner nanner nanner bread, warm from the oven. Stick in my tummy please! Oh there is nothing more comforting than warm banana bread in my tummy.

Does anyone else feel like that? There is just something about it that makes me feel all warm and cozy.

When I saw this fun twist on typical old banana bread I knew I had to try it. I was not disappointed!

My husband repeatedly said, “Is it done yet? Can I eat it yet? Do you need to take that many pictures?”

I felt like I had another kid. Meanwhile my actual child, Miss K, was taking a nap like a good little girl!

This was snatched up by my hubby and little brother who was over in no time at all!

Cinnamon Swirl Banana Bread

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Yield: 8 pieces

Serving Size: 1 piece

Cinnamon Swirl Banana Bread

Ingredients

    Bread
  • 3 over-rip bananas, mashed
  • 1/3 c. melted butter
  • 3/4 c. sugar
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 1/2 c. flour
  • Swirl
  • 1/4 c. sugar
  • 1 Tbsp cinnamon

Instructions

  1. Preheat oven to 350 degrees. Butter and flour a loaf pan.
  2. Mix bananas, butter, sugar, egg and vanilla together. Add soda, salt and flour. Gently stir. Do not over mix.
  3. In a small bowl mix the sugar and cinnamon together.
  4. Pour 1/2 of batter into pan. Sprinkle half of the cinnamon sugar mixture on top of batter. Add the rest of the banana mixture to the pan. Top with the rest of the cinnamon sugar mixture.
  5. Bake for 50-60 minutes.

Happy Easter! I hope you take time to count your blessings today and appreciate all life has gave you. I know I’m so blessed and yet sometimes I forget it. I get caught up in the hustle and bustle of every day life and quickly get distracted by what others have that I don’t. I forget that God has provided me so many things that others don’t have, yet jealously sometimes gets in the way of being thankful for those things. Today I’m making it a point to be thankful. I’m so blessed in life from my amazing husband and two beautiful, healthy daughters, tons of family and friends that are simply amazing. I have an amazing job that I love, a blog that is fun, demanding and crazy, but I love every bit of it. I have a home that is filled with love, laughter and antics that make me smile and sometimes want to pull my hair out, but life wouldn’t be nearly as amazing without it all.

Speaking of that home it’s quiet. Empty. Amazing. That amazing hubs took the girls to his dad for the morning and said you just work on blog stuff that I know you need to do. I said uh YES! PLEASE! I’ve been neglecting it and I’m starting to feel the pressure since I went back to work. Thankfully I got way ahead of things before I went back to work and therefore it’s not majorly kicking my but just sorta. Enough to start stressing me out because I’m whipping menu plans out on Thursday morning when they are supposed to be live. That sorta thing. I’m such a planner that I don’t thrive on the last minute stuff. Anyone else like that? I plan, plan and then replan. It drives my hubs nuts sometimes. He’s always asking me what my plan is and then I smile sweetly and say what plan? Than he laughs and goes I know you have one so just spill it. Yup. He knows me. Yet, he still loves me so that’s good!

Glazed Lemon Poppy Seed Bread ~ Quick & Easy Lemon Bread with Poppy Seeds! Topped off with a Delicious Lemon Glaze!

Sometimes I get caught without a plan on need a treat to bring somewhere on the fly. This delicious Lemon Poppy Seed Bread is a quick, delicious bread that can solve your needs when you get into one of those pinches. It starts out with a cake mix and you dressing it up with lemon pudding and a few other ingredients. Then once it’s done you drizzle that amazing, to-die for lemon glaze on top. Isn’t it so pretty? Not only pretty but it really takes this bread to the next level of deliciousness. I love a glaze that pours nicely and sets up and this one is perfect! Plus it’s got a little lemon flavor in there too. Not so sure about lemon? Don’t worry you will be pleasantly surprised by this bread. It has just the right amount of lemon without being overpowering. The hubster that says he’s not a lemon fan polished off three pieces of bread in one sitting!

Glazed Lemon Poppy Seed Bread

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Yield: 2 loaves

Glazed Lemon Poppy Seed Bread

Ingredients

    Bread
  • 1 (18 1/4 oz) package white cake mix
  • 1 (3.4 oz) package instant lemon pudding mix
  • 1 c. warm water
  • 4 eggs
  • 1/2 c. canola oil
  • 4 tsp poppy seeds
  • Glaze
  • 1 c. powdered sugar
  • 1 tsp lemon juice
  • 2 tsp milk

Instructions

  1. {reheat oven to 350 degrees. Grease two 9 in x 5 in x 3 in loaf pans.
  2. Combine the cake mix, pudding mix, water, eggs and oil in a large bowl. Beat on low speed for 30 seconds then beat on medium speed for 2 minutes until light and fluff. Stir in poppy seeds. Evenly divide between prepared loaf pans.
  3. Bake for 350-40 minutes or until toothpick inserted into middle of loaves comes out clean. Cool in pan for 10 minutes then remove to wire rack. Cool completely.
  4. In a small mixing bowl combine powdered sugar, lemon juice and milk. Stir until completely combined. Pour over loaves. Store in airtight container.

Hello again! I am back to talk to you all about one of my obsessions. Also known as muffins. I have baked countless of batches of muffins, ranging all the way from classic flavors, to fabulous combinations, and anything in between. Or so I thought. Whenever I think I’ve made and eaten it all, another version of my beloved morning treats pops into my head and I can hardly turn on my mixer fast enough, ha. Today’s recipe was no exception. Since I’ve developed a huge love for fresh or frozen fruit, especially berries, in my baked goods and desserts, I was beyond thrilled when I was whipping up these muffins.

Anything that contains chocolate has got to be good, right? But just wait until you add the frozen berries to the mix. They give the batter and eventually the muffins themselves those beautiful pops of color that will have everyone excited when they grab one. Aside from the fact that these muffins are esthetically pleasing, I was mostly looking forward to taking that first bite though. There’s nothing like sinking your teeth into freshly baked muffins and feeling the slightly warm yet juicy raspberries explode. The white chocolate is subtle, but pairs so well with the raspberries. I know I will be making this combo over and over again.

I actually know the perfect day to make them again. With Mother’s Day right around the corner, I may have unknowingly created a muffin recipe that would be just the right thing to share with our moms. I can also think of so many other occasions to which I’d bring these. Baby showers, bridal showers, picnics or to a relaxing cookout with friends. Since they’re so quick to make, require pantry staples and are sure to please everyone, I don’t think one can go wrong.

White Chocolate Chip Raspberry Muffins

Yield: 14-16

Ingredients

  • For the Muffins:
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoons salt
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 2 large eggs
  • 1 1/4 cups milk
  • 1 teaspoon vanilla
  • 1/3 cup vegetable or canola oil
  • 1 cup white chocolate chips
  • 1 cup frozen raspberries
  • For the Glaze:
  • 1 cup confectioner's sugar
  • 2 tablespoons milk
  • pink food coloring, optional

Instructions

  1. Preheat oven to 375 degrees F. Grease a muffin pan with shortening or line with paper liners.
  2. Whisk together flour, salt, sugar and baking powder. Set the bowl aside.
  3. In the bowl of your stand mixer, mix together the eggs, milk, vanilla and oil until combined. Add flour mixture until just combined. Don't over mix. Fold in the chocolate chips and frozen raspberries. Fill each muffin tin about 3/4 full.
  4. Bake muffins for 22-25 minutes or until golden. Remove the muffin pan from the oven and place on a cooling rack. Let the muffins cool for 5 minutes before inverting the muffins onto the cooling rack to cool more.
  5. Once muffins are still slightly warm, prepare the glaze. Whisk together sugar and milk until smooth. I drizzled about half of the glaze over the muffins and added 1 drop of pink food coloring to the remaining glaze and mixed it well. Drizzle pink glaze over the muffins as well. Let sit for 5-10 more minutes or until glaze is set. Enjoy!

Another weekend has came and went. Can you believe it? I think someone should invent a new work week. We work two days and have five off. Why hasn’t this been done yet? It seems like it would be a lot more enjoyable! Today was a rather laid back day but we also got some different things accomplished. We started by going to church with my mom and I read in church and Jason helped my little brother usher. After we were done with that it was off to Mom’s for some of her famous Monkey Bread. It was oh so yummy. In between that and church Jason got roped into putting Brent’s new door on his house. It’s amazing how my wonderful hubby is always in such demand. It seems like someone always needs his expertise that’s for sure! I helped mom get her patio furniture out of storage so she could enjoy some time on it this week. It sounds like it suppose to be an absolutely gorgeous week. I think we definitely deserve it that’s for sure after the cruddy weather we’ve been having. When we got home it was on to cleaning out our trucks. I’ve been waiting to tackle this but the weather doesn’t seem to want to cooperate, so today was the day. I bought my truck in December and this is the first official cleaning I’ve gave it. Let’s just say it was long over due! This week should be a fairly relaxed one. We get carpet tomorrow and that’s the only thing on the agenda. Oh wait I have my first softball practice Wednesday too…look it’s already filling up! Typical right? The recipe I’m sharing with you is a new recipe that I tried. Mom told me she had some rhubarb ready and I was stilling trying to get rid of my extra buttermilk so I goggled rhubarb and buttermilk and this what I came up with! It is very, very good. Jason even said it was pretty good and has been nibbling on it and he doesn’t even like rhubarb! It is moist and has the most wonderful topping on it. Enjoy!

Buttermilk Rhubarb Bread

Prep Time: 15 minutes

Cook Time: 1 hour, 5 minutes

Total Time: 1 hour, 10 minutes

Yield: 8 servings

Buttermilk Rhubarb Bread

Ingredients

  • 3/4 c. Brown Sugar
  • 1/3 c. Vegetable Oil
  • 1 Egg
  • 1/2 c. Buttermilk
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/4 tsp Cinnamon
  • 1 tsp Vanilla
  • 1 1/2 c. Flour
  • 1 c. Rhubarb, diced
  • 1/2 c. White Chocolate Chips
  • Topping
  • 2 Tbsp Sugar
  • 1 Tbsp Butter, melted
  • 1/4 tsp Cinnamon

Instructions

  1. Mix all bread ingredients together.
  2. Generously grease a bread pan. Pour batter into pan.
  3. In a small bowl combine topping ingredients. Sprinkle over batter.
  4. Bake at 325 degrees for 55-65 minutes or until it test done.Mix all bread ingredients together.
  5. Allow to cool completely before removing from pan.

The hubby has been begging for this recipe for a good two months now. I finally remembered to look for zucchini at the grocery store and he was ecstatic when he walked in the door and there was fresh zucchini bread! This recipe comes from my Aunt Cheryl and it is moist, easy and tastes amazing. I remember making this for one of my cooking classes in college. We had to prepare a meal for 40 people during this class and it was my night to be “manager” which included coming up with a seven course meal and I included this for my bread. I had several classmates question me about “zucchini bread”??? I said don’t knock it until you try it! After the meal was done and we were doing out taste testing and review my classmates single heartedly agreed that the recipe was all I had talked it up to be. Luckily this recipe turned out last night because I have been on a roll of things not going so great. For example – As the hubby was tossing out a half pan of bars that didn’t turn out he yelled from the kitchen “Julie you sure are striking out on this cooking thing lately.” Then added, “Want to take a picture of me throwing away your bars?” How helpful of him! Supper tonight looks like it’s redeeming me also, well it smells like it is so hopefully it will. Can’t wait to share it with you! Enjoy!

Zucchini Bread

Prep Time: 15 minutes

Cook Time: 60 minutes

Total Time: 1 hour, 15 minutes

Yield: 8 servings

Serving Size: 1 slice

Zucchini Bread

Ingredients

  • 1 c. oil
  • 2 c. sugar
  • 3 eggs
  • 2 c. zucchini
  • 1/2 c. milk
  • 3 c. flour
  • 3 tsp cinnamon
  • 1 tsp soda
  • 1 tsp baking powder
  • 1 tsp salt
  • Cinnamon Sugar Topping
  • 1/4 c. sugar
  • 1 tsp cinnamon

Instructions

  1. Press water our of zucchini. In a large bowl combine oil, sugar, eggs and zucchini until combined.
  2. In a separate mixing bowl combine flour, cinnamon, soda, baking powder and salt.
  3. Add second mixture to first alternating with milk.
  4. Pour into two greased loaf pans.
  5. Mix topping ingredients together and sprinkle on top of bread.
  6. Bake for 1 hr at 350 degrees.

Cranberries. Love them or hate them? I’m kind of love them one time, pass on them another time. I love this Crock Pot Cranberry Pork Loin because of the savory flavors that don’t over power and then we have this every popular Cranberry Cream Cheese Dip that is HOT on Pinterest right now! And, let’s get real, we are never going to turn down some cookies, especially Oatmeal Cranberry White Chocolate Chip Cookies!

Why won’t we turn down cookies? Because they make everything better. For example when you are going through a funk like me right now. It’s bad. Real bad. I don’t know if I’m stressed, overworked, or what, but I just can not find my groove. Maybe it’s just a serious case of PMS? Lovely lady things like that rock don’t they? I’m feeling tired, cranky and unmotivated to do pretty much anything and I’m hoping it changes real fast like. It does not help winter is coming because that always makes things dull and dreary in my opinion!

So what do you do when you get in these funks? We all have them.

I’m envisioning a spa day with one of my best girlfriends, lunch out, coming home to a clean house and a full bank account. Ok, maybe that last part was just a little bit to hopeful! It would be nice though wouldn’t it? It would relieve a lot of the pressures we all face in our lives. I could totally make the spa and lunch day happen though couldn’t I?

Then I enter the Mom guilt into the equation. That battle is a battle. I work full time so I don’t see the kiddos much during the week and then to think of leaving for a day on the weekend or heaven forbid the entire weekend like I’m doing this coming weekend I have anxiety. First of all my hubs is left with the kids all weekend and he needs a break too so is that fair? Then, of course, the kids miss me, but really do they? Well, obviously a little bit but they are resilient and let’s face it sometimes Dad’s more fun! I’m guessing there’s going to be a whole lot of pizza and hot dogs and mac and cheese in their future this weekend. Along with Ranger rides and going to Grandpa’s house for a sleep over with Auntie since she’s home. Really, I don’t think they are going to miss me at all!

So maybe I think it’s far more of a big deal than it actually is! Apparently, I need to get my undies out of a wad and enjoy my weekend away at my photography workshop. Let’s focus on that!

And maybe I need a few more slices of this delicious Cranberry Cream Cheese Bread in my life to sweeten it up. I adore quick bread recipes and this one is delicious. The cream cheese adds a richness to it and it’s not crumbly at all due to this. It’s pretty much perfectly sweet and delicious with the addition of the tart cranberries bursting in your mouth!

Cream Cheese Cranberry Bread Recipe

Prep Time: 20 minutes

Cook Time: 60 minutes

Total Time: 1 hour, 20 minutes

Yield: 8 servings

Cream Cheese Cranberry Bread Recipe

Ingredients

  • 1 c. butter, softened
  • 1 (8 oz) package cream cheese, softened
  • 1 1/2 c. sugar
  • 1 1/2 tsp vanilla
  • 4 eggs
  • 2 c. flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 c. cranberries (fresh or frozen)
  • 1/2 c. chopped pecans, optional

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl cream together butter, cream cheese, sugar and vanilla. Add eggs, one at a time, beating well after each addition.
  3. In another bowl combine flour, baking powder and salt. Slowly mix into wet batter until combined. Fold in cranberries and nuts.
  4. One greased 9 in. x 5 in. loaf pans. Bake at 350 degrees for 1 30 minutes or 4 mini loaf pans for 40 minutes.

Notes

There are many comments about this not baking through etc. I have retested the recipe and it will bake through in one 9x5 loaf pan, but you can also use two if you'd like. Adjust baking time to about 50-60 minutes. It also works great in four mini loaf pans!

Sometimes I just crave a big hunk of banana bread and it seems like you do to because you love this Banana Bread recipe! Sometimes I like to live on the edge a little and make a banana bread with a twsit! When I’m in that mood I make Cinnamon Chocolate Toffee Banana Bread or Cinnamon Swirl Banana Bread. The only problem is that I can never stop at one slice! Fresh out of the oven is when it’s the hardest to resist temptation! That’s when I decided it was time I gave us another alternative with a Healthy Banana Bread option! It uses coconut oil, whole wheat flour and Truvia to lighten the traditional recipe up a bit. Then when I go for that second slice, which I know I’m going to do, I won’t feel quite as guilty!

Banana Bread is my comfort food. I’ll admit it. If it’s a cold blustery day in the winter it’s that thing I crave to eat. I love to make it, enjoy the delicious aroma while it bakes and of course love to dig in once it’s done, often times burning the top of my mouth! Or if I’m having a bad day it’s the same deal!

Last week I had one of those bad days where I was craving some Banana Bread. You see I appear to have it all together or at least that is what I’m often told. In my head I’m laughing hysterically at this conversation because I know I don’t have it all together. Far, far from it. I must do an excellent job of covering this up! For instance last weekend after church I had a slight panic attack because I realized that Easter was the next weekend. For some reason I thought there was another week in there. I had bought the girl’s dresses and had them ready to go but I didn’t have a white sweater to go over RyRy’s and in Minnesota you need one in March! After some searching the hubs found one online that would be here in time and the crisis was averted.

Or so I thought…

Until I got that package and it seemed REALLY heavy for a tiny little white sweater. I opened up the package and low and behold it contained three pairs of men’s cargo pants. Instant panic. I live in small town Minnesota it’s not like I can run up town and purchase one, henceforth why I ordered it online! Immediately I go to Facebook to vent and my amazing, supportive friends are offering up their sweaters. My sister-in-law saved the day and picked one up on the way home Friday.

And if anyone wears a Men’s size 34×30 and would like some dark brown cargo pants I totally can hook you up!

  • 1/2 c. coconut oil, liquid form
  • 1/2 c. Truvia baking blend
  • 2 eggs
  • 1/2 c. Greek Yogurt
  • 3 ripe bananas, mashed
  • 2 tsp vanilla extract
  • 1 1/4 c. white whole wheat flour
  • 1/4 tsp salt
  • 1 tsp baking soda

Instructions

  1. Preheat oven to 350 degrees. Spray four mini loaf pans with non-stick cooking spray.
  2. Cream together coconut oil and Truvia baking blend in a mixing bowl using a hand held mixer. Add egg one at a time; beating after each addition.
  3. Mix in Greek Yogurt, banana and vanilla extract until completely incorporated.
  4. In a separate mixing bowl combine flour, salt and baking soda. Gradually add to wet ingredients mixing as you go.
  5. Divide batter between the mini loaf pans, filling each halfway.
  6. Bake for 30 minutes or until the tops are browned and a toothpick inserted into center of loaf comes out clean.

I’ve always loved the idea of having my own vegetable and herb garden. When I picture it in my mind, I see myself pulling an Ina Garten and heading outside to grab my gorgeous, homegrown herbs to sprinkle over my fancy dishes.

Yeah. There’s a little bit of a disconnect between my imagination and reality. Not only am I slightly green-thumb impaired (so, obviously, right off the bat we can assume my garden will never look like Ina’s), my idea of a fancy meal is using a different cheese besides cheddar on my stovetop mac and cheese recipe (clearly, I’m more of a casual, comfort-food kind of girl).Crumb Apple Zucchini Bread ~ Easy, Quick Bread Recipe Filled with Fresh Grated Zucchini and Sweet Apples then Topped with a Delicious Cinnamon Brown Sugar Crumb Topping!

So, no, the zucchini in this recipe is not homegrown (for those of you with zucchini gardens, teach me your ways! But really though…), but the mixture of the fresh zucchini with the sweet apples makes this quick bread recipe a total crowd pleaser.

And that crumb topping! Am I right?! It’s a pretty similar recipe to the one I used on this coffee cake banana bread, and it was my greatest decision all week long. I’m not even joking.

Whenever I’m in a cafe or coffee shop, my willpower gets a workout as I try to refrain from tacking on a muffin, a small slice of lemon loaf cake, or pound cake (okay, okay, I know pound cake is technically a cake rather than a bread, but when it’s shaped like a bread loaf, I’m calling it a bread so I can justify my dessert later 😉 ).

And, because there are apples in this ‘lil baby, I totally had a slice of this breakfast. Oatmeal’s got nothing on you, Zucchini Apple Crumb Bread.

I’m pretty sure I hear this recipe calling your name, 😉

Crumb Apple Zucchini Bread

Prep Time: 25 minutes

Cook Time: 55 minutes

Yield: 1 Large Loaf

Crumb Apple Zucchini Bread

This easy quick bread recipe is filled with fresh grated zucchini and sweet apples, and topped with a cinnamon brown sugar crumb topping!

Ingredients

    Bread
  • 1 1/2 cups all purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/3 cup canola or vegetable oil
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup grated zucchini
    Apples
  • 1 cup chopped apples
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1 tsp cinnamon
    Crumb Topping
  • 1 tsp cinnamon
  • 1 cup flour
  • 1 cup brown sugar
  • 6 Tbsp cubed butter, cold

Instructions

  1. Preheat the oven to 350 degrees and grease an 8 1/2 x 4 1/2 bread pan. Set aside.
    Apples
  1. In a small saucepan over med-low heat, cook chopped apples with 2 Tbsp of brown sugar, 1 Tbsp butter, and 1 tsp of cinnamon, for 5-7 minutes, stirring occasionally, or until apples have begun to soften. Pull off heat and allow to cool.
    Bread
  1. In a large bowl, sift together flour, sugar, baking powder, salt, and cinnamon.
  2. In a another bowl, mix oil, milk, eggs, and vanilla extract together.
  3. Making a well in the center of the dry ingredients, pour in the wet ingredients and stir until combined.
  4. Add in grated zucchini (zucchini is a very wet vegetable, so try to pat off as much excess water as possible with a paper towel before adding to the batter) and cooled apples. Fold into the batter.
  5. Pour batter into prepared bread pan.
    Crumb Topping
  1. Combine cinnamon, flour, and brown sugar. Cut in butter with a pastry cutter, and mix until the topping looks like coarse crumbs. Sprinkle coating evenly over the batter.
  2. Bake for 55-60 minutes, or until a cake tester comes out clean (My oven took exactly 55 minutes; around the 40-minute mark, I usually cover the bread with a piece of foil to keep the top from browning too much).
  3. Allow bread to cool before removing from pan.
  4. Enjoy!

I have a confession to make. Bread usually scares me because it calls for a certain temperature of liquids and the yeast just makes me nervous, but this one looked so simple I knew I could handle it and so can you!

I made this recipe on Friday and took a couple loaves out to my mom’s for coffee the next morning because I always like to treat my family when I make new recipes. They don’t ever seem to complain about it!

My brother’s girlfriend was at mom’s and we were all sitting at the kitchen table sipping our coffee and eating toast…sounds like the perfect little family on the farm doesn’t it? Don’t worry there was tons of good natured ribbing going on around the table too!

We show our love for each other by teasing most of the time. Although, I have to confess, my little brother is a hugger. If he knows I’m upset or stressed he comes running up to me and scoops me up saying, “Julie need a hug? Julie need a hug” It’s been a tradition for quite some time. And yes he does scoop considering he’s 6′ 7” tall!

English Muffin Bread ~ Perfect Bread for Toasting! Homemade Bread that has the Same Texture and Flavor as Your Favorite English Muffins!
This bread is so simple and easy plus it makes your home smell like a million bucks. It makes wonderful toast especially smothered with my mom’s homemade Strawberry Rhubarb jam. The hubby is waiting to make some eggs and sausage with it. He was super excited about this prospect!

English Muffin Bread

Prep Time: 1 hour, 20 minutes

Cook Time: 25 minutes

Total Time: 1 hour, 45 minutes

Yield: 2 Loaves

English Muffin Bread

Ingredients

  • 2 c. milk
  • 1/2 c. water
  • 4 1/2 tsp Rapid Rise Yeast
  • 5-6 c. all-purpose flour
  • 1 Tbsp sugar
  • 2 tsp salt
  • 1/4 tsp baking soda
  • 2 Tbsp corn meal

Instructions

  1. Warm the milk and water over low heat until warm, around 120 degrees. Remove from the heat and add the yeast to the mixture and let bloom, about 5 minutes.
  2. In the bowl of a stand mixer add the yeast and milk mixture and stir in the flour, sugar, salt, and baking soda.
  3. Knead on medium speed for 7 minutes with dough hook. Test dough and add more flour if it's too sticky too handle. I ended up using almost the entire 6 cups of flour before mine came together. It should be slightly sticky, but workable.
  4. Spray two 8x4 loaf pans with nonstick cooking spray. Then sprinkle them with corn meal. Shake the pan around so that the corn meal coats the inside of the pan evenly.
  5. Place the dough in the pan and let rise until doubled, about 45 minutes.
  6. Bake in a 400 degree oven for 25 minutes or until golden brown. Cool completely before slicing.
